Veggie Tahini Lentils Recipe

​​​​​​In the spirit of the zero food waste, here's a recipe that you can use any odd shaped, left-over veg for. The combination doesn't matter, cook it up and serve with Yeni Rakı. It's always delicious!


  • 50g tahini
  • 1 lemon
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 250g pack pre-cooked Puy lentils
  • A mixture of vegetables – for example, 1 onion, 1 pepper, 1 courgette, half a bag of kale, 1 aubergine sliced and diced as you prefer


Mix the tahini with the zest and juice of one lemon and 50ml of cold water to make the dressing. Season to taste, to use later. Heat olive oil in a large frying pan and add red onion, season with salt and fry for 3 minutes. Add the pepper, courgette and aubergine, fry for 5 mins, stirring frequently. Add the kale, lentils and the tahini dressing. Keep the pan on the heat for a couple of minutes, stirring everything together until the kale is wilted and it's all coated in the tahini dressing.
