Veggie Tahini Lentils Recipe

​​​​​In the spirit of the zero food waste, here's a recipe that you can use any odd shaped, left-over veg for. The combination doesn't matter, cook it up and serve with Yeni Rakı. It's always delicious!

Ingredients:

  • 50g tahini
  • 1 lemon
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 250g pack pre-cooked Puy lentils
  • A mixture of vegetables – for example, 1 onion, 1 pepper, 1 courgette, half a bag of kale, 1 aubergine sliced and diced as you prefer

Method:

Mix the tahini with the zest and juice of one lemon and 50ml of cold water to make the dressing. Season to taste, to use later. Heat olive oil in a large frying pan and add red onion, season with salt and fry for 3 minutes. Add the pepper, courgette and aubergine, fry for 5 mins, stirring frequently. Add the kale, lentils and the tahini dressing. Keep the pan on the heat for a couple of minutes, stirring everything together until the kale is wilted and it's all coated in the tahini dressing.
