Different from other shish recipes, in Jujeh we do not use any tomato paste, instead, we use saffron. The key factor for this meal is the marination process and longer marination means more tender chicken. In addition to the below ingredients, you also need some skewers for the grilling process. Do not skip the grilling process and cook the chickens on a pan since the ethnicity and the taste comes from it.

Jujeh Kebab Recipe
In a bowl combine the yogurt, onions, olive oil, lime juice, liquid saffron, salt, and pepper. Pour the mixture, adjust the seasoning with lime juice, salt, and pepper. Pour the mixture over the chicken in a large bowl. Rest for 2 hours. Meanwhile, in a saucepan, cook the remaining saffron mixture, butter, and lime juice until it is getting thick. Then grill the marinated chicken. When the chickens are cooking, pour over the sauce you prepared.
