Falafel, one of the most chosen vegan appetite is a perfect combination of chickpeas and spicies. It is easy soft and well tasted crunchy but soft inside meatballs. FALAFEL RECIPE

INGREDIENTS:
-       1 cup chickpeas (drained)
-       1 onion
-       Cilantro
-       1 tsp chili pepper
-       1 tsp cumin
-       1 tsp black pepper
-       1 tsp salt
-       2-3 cloves of garlic
-       1-2 tbsp flour

FOR SERVING:
-       Freshly chopped parsley
-       Tahini sauce and a lemon
 
METHOD:
Soak the chickpeas overnight and drain them. Combine onion, garlic, cilantro and all the spices together in a food processor.  Mix them well but keep the texture a bit. Add 1 tbsp of flour to give that dough effect. Make walnut-sized balls from the mixture and place them to the fridge for 2-3 hours. Heat the pan and add olive oil. Fry them until they become lightly golden. Serve with freshly ​chopped parsley, tahini sauce and a lemon. Share, savour and enjoy!​
